Simple soup recipes for a cold day

There's nothing better than a warm bowl of soup on a chilly winter's day. Not only is it the perfect way to boost your family's health (yay, veggies!), it's simple to make and easy on the pockets.

Try these 3 recipes with freshly baked bread, as an easy midweek dinner or save to heat up for a nutritious lunch.

Mushroom and Barley Soup

Ingredients

  1. tablespoons olive oil

  2. 1 cup of sliced mushrooms

  3. cups of chopped carrots

  4. cloves sliced garlic

  5. Fresh thyme

  6. Salt and black pepper

  7. cups of vegetable broth

  8. 3/4  cup of pearl barley

  9. tablespoon chopped flat-leaf parsley

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the mushrooms, carrots, garlic, thyme, and ¾ teaspoon each salt and pepper. Cook, stirring occasionally, until the carrots are tender, 8 to 10 minutes.

  2. Add the vegetable broth and barley. Simmer, partially covered, until the barley is tender, 30 to 35 minutes. Top with the chopped flat-leaf parsley before serving.

Creamy Broccoli and Spinach Soup

Ingredients

  1. 2 chopped leeks

  2. tablespoons unsalted butter

  3. Salt and black pepper

  4. cups of vegetable broth

  5. bunch of chopped broccoli

  6. small potato, peeled and chopped

  7. cup of spinach

  8. sour cream

directions

  1. Cook the leeks in the butter with ¾ teaspoon salt and ¼ teaspoon pepper in a large pot over medium-high heat, stirring occasionally, until softened, 4 to 6 minutes.

  2. Add the vegetable broth, broccoli, and potato. Simmer until tender, 18 to 22 minutes.

  3. Stir in the spinach until wilted. Transfer the mixture to a blender and puree until smooth. Top with the sour cream and black pepper to taste before serving. Add some croutons for some crunch!

White Bean and Chicken Sausage Soup

Ingredients

  1. 1/2 cup of fully cooked sliced chicken sausages

  2. tablespoons olive oil

  3. cloves of sliced garlic

  4. cups of chicken broth

  5. cup of spinach

  6. can of cannellini beans, rinsed and slightly mashed

  7. Salt and black pepper

directions

  1. Brown the sausages in the oil in a large pot over medium-high heat, 3 to 5 minutes. Add the garlic and cook, stirring, for 1 minute.

  2. Add the chicken broth, beans, spinach, ½ teaspoon salt, and ¼ teaspoon pepper. Simmer for 8 to 10 minutes.
